Waldorf Salad with Raisins and Coconut

Apple pieces are tossed in lemon juice and sugar. Cream cheese, white sugar, and mayonnaise are combined to create dressing. Apple, chopped celery, raisins, chopped pecans, and coconut are tossed in dressing and served over lettuce leaves.

Ingredients -
4 Roam Beauty (or any tart apple), washed, unpeeled & chopped
1-1/2 tablespoons Fresh Lemon Juice, sprinkled over apple cubes
1 tablespoon Sugar, mixed with apple
1 (3-1/2 ounces) package Flaked Coconut
3/4 cup Raisins
3/4 cup coarsely chopped Pecans
1/2 cup chopped Celery
1-1/2 ounces Cream Cheese
1 tablespoon Powdered Sugar
2 tablespoons Mayonnaise
 
Preparation:

1. In a medium bowl, combine the lemon juice and sugar.

2. Add the apples and toss to coat.

3. In a small bowl, add the cream cheese, sugar and mayonnaise.

4. Mix well.

5. Add the celery, raisins, pecans and coconut to the apple mixture.

6. Pour the dressing over the fruit and stir well to combine.

7. Transfer to a serving dish lined with lettuce leaves.

8. Serve.

Washing Apples

Apples should be washed before use. Remove any surface dirt by running them under cold water. Use a paring knife to remove the top and bottom stem areas. Cut into halves and remove the core. Slice or dice the apple for eating.
