Waldorf Salad

Dressing prepared from mayonnaise, applesauce, honey, and fresh lemon juice is tossed with diced apple, chopped celery, chopped walnuts, sea salt, and fresh ground black pepper. Salad is chilled and served over lettuce leaves.

Ingredients -

Dressing:
1/2 cup Mayonnaise
1/2 cup Cinnamon Applesauce
3 tablespoons Honey
1 tablespoon Fresh Lemon Juice

Salad:
4 Granny Smith Apples, crisp, firm
3 Celery Stalks
1-1/2 cups Walnuts, coarsely chopped
Sea Salt, to taste
Fresh Ground Black Pepper, to taste
Iceberg Lettuce Leaves, for garnish

 
Preparation:

1. Add the mayo, applesauce, honey and lemon juice to a small bowl and whisk to combine.

2. Clean, core, peel and dice the Granny Smith apples.

3. Cut the celery into 1/2 inch chunks.

4. Add the apples, celery and walnuts to a large mixing bowl.

5. Sprinkle the mixture lightly with salt and pepper.

6. Pour the applesauce dressing over the salad and stir well to combine.

7. Prepare a platter covered with the iceberg lettuce leaves.

8. Spoon the salad mixture over the leaves.

9. Chill for at least 3 hours.

10. Serve.

Selecting Grapes

Avoid grape bunches with stems that are brittle or browning. When you shake the bunch, grapes should not leak or fall off. They should appear fresh and plump, and holding tightly to the stem.
