Waldorf Pasta Salad With Rotisserie Chicken

Pasta salad based on the popular waldorf salad. Delicious as a side or main dish.
Ingredients -
1 Rotisserie Chicken
1 Red Delicious Apple, sliced
1 bunch Watercress
8 ounces Cappellini Pasta, broken into thirds

Waldorf Dressing:
1/3 cup Apple Cider Vinegar
2 tablespoons Honey
1 tablespoon Honey Dijon Mustard
1 teaspoon chopped Thyme
1/8 teaspoon Salt
1/8 teaspoon Pepper
2/3 cup Olive Oil

Garnish:
3/4 cup Glazed Sesame Walnuts

 
Preparation:

Waldorf Dressing:
1. Combine apple cider vinegar, honey, honey Dijon mustard, chopped thyme, salt and pepper.

2. Whisk in olive oil.

3. Set aside.

Pasta Salad:
1. Shred rotisserie chicken into large serving bowl.

2. Add sliced apples and watercress. Toss to combine.

3. Cook pasta al dente. Drain into colander, rinse with cold water.

4. Add pasta to chicken mixture.

5. Add glazed sesame walnuts to Waldorf pasta salad.

6. Toss salad with Waldorf dressing.

 



Salad Making Tip -
Mincing Garlic

Sprinkle finely diced garlic with coarse salt to help in the process of mincing garlic. Use the side of a chefs knife to crush the garlic further.

Cutting Chicken

Use a sharp knife when carving or cutting chicken. Sharp knives make the job much easier, especially when cutting at the joint or cutting neat slices and pieces.
