Waldorf Chicken Salad

Roasted chicken pieces combined with diced apple, chopped celery, diced green pepper, diced white onion, halved red grapes, chopped walnuts, and golden raisins. Salad is tossed with dressing prepared from orange juice, plain yogurt, coarse salt, and ground nutmeg.

Ingredients -
1 Roasted Chicken, (2 1/2 pounds), cubed
1 large Granny Smith apple, cut bite size
2 Celery Stalks, cut diagonally
1 small Green Pepper, diced
1/2 small White Onion, diced
1 cup Red Grapes, seedless, halved
1/2 cup Walnuts, coarsely chopped
1 cup Golden Raisins
2/3 cup Orange Juice
1/2 cup Plain Yogurt
1/2 teaspoon Coarse Salt
1/8 teaspoon Ground Nutmeg
 
Preparation:

1. Combine together the first 7 ingredients in a large salad bowl.

2. In a small bowl, beat together the orange juice, yogurt, salt and nutmeg.

3. Add the dressing to the salad and mix well to combine.

4. To serve, arrange a few salad plates with thinly sliced lettuce.

5. Place a serving of chicken salad on top of the lettuce and sprinkle with more walnuts.

6. Serve immediately.

Apples become soft much faster when stored at room temperature. Keep apples in plastic bags and away from other strong flavored foods.
