Frozen Waldorf Salad

Custard created from eggs, sugar, fresh lemon juice, pineapple juice and salt. Custard combined with apples, pineapple, marshmallows, celery, pecans, mayonnaise, ands whipped cream. Mixture is transferred to small ceramic casserole dish and frozen. Salad served in chilled margarita or martini glasses.

Ingredients -
1 can Crushed Pineapple, (9 ounces), drained, juices reserved
2 Eggs, slightly beaten
1/2 cup White Sugar
1/4 cup Fresh Lemon Juice
1/8 teaspoon Sea Salt
1/4 cup Mayonnaise
2 medium Red Delicious Apples
2/3 cup Celery, diced
1/2 cup Pecans, coarsely chopped
1/3 cup Miniature Marshmallows
1/2 cup Whipping Cream
 
Preparation:

1. In a medium saucepan, mix together the reserved juice, lemon juice, eggs, sugar and salt.

2. Cook the mixture until slightly thickened over low heat, stirring constantly.

3. Remove the saucepan from the heat and set aside to cool.

4. Stir in the mayonnaise.

5. Combine the diced apples with the pineapple, marshmallows, celery and pecans.

6. In a small bowl, whip the cream and fold it into the saucepan that was set to the side.

7. Pour the contents of the saucepan over the fruit and gently toss to combine.

8. Transfer the mixture to an 8 inch pan and freeze until solid.
